All the produce and products used in the restaurant come from small farms and local businesses. The salami made from Cinta Senese pigs, Appennica breed lambs, cheeses, legumes and seasonal vegetables are all sourced locally! Even our pasta is homemade in our very own kitchen. The Ristorante dei Merli menu offers flavours from the culinary history of the territory, accompanied by the best selection of Maremman and Tuscan wines. Hotel guests can also visit the farms and buy the products we use in our dishes directly from the farmers.
